spinach smoothie

I thought I would give myself a break from the bacon and egg breakfasts I've been preparing for myself the past few days and create a healthy smoothie.  Spinach is packed with iron and the vitamin C in the peaches helps its absorption.  Iron is especially important in the 2nd and 3rd trimester of pregnancy.  

Recipe:

1c spinach
1 banana
1 c frozen peaches
2 tbsp plain greek yogurt
1 tbsp honey
8 oz vanilla soymilk

Blend together until smooth.  You can't even taste the spinach!  Yum.

It's a girl!

We are 20 weeks and 2 days today.  More than halfway there!  We found out today that we are having a GIRL. :-)

Baby is weighing in perfectly at ~ 12 oz, about the size of a small cantaloupe.  There has been lots of twisting, turning, kicking, and punching going on in there. ;-)

Cucumber Salad

I found this yummy, healthy snack recipe in Self magazine today.  Forget the fact that I had a sausage, egg, & cheese McGriddle meal with hash browns this am before class.  This was my after class "healthy" snack and was delicious as well.  

Recipe:

In a bowl, combine:

 1/2 c nonfat plain Greek yogurt

 1/2 c diced cucumber

1/2 c diced tomatoes

1/2 c diced avocado

sprinkle with sea salt and fresh ground black pepper
